Almond Butter Chicken Salad

• 16 ounces shredded chicken • 32 grams or 2 tablespoons almond butter • 26 grams or 2 tablespoons olive oil • 2 teaspoons apple cider vinegar • 1 teaspoon dijon mustard • 1/4 teaspoon salt • 1 cup celery, chopped • 25 grams or 1/2 cup red onion, diced • 50 grams or 1/2 cup grapes, halved • 40 grams or 1/4 cup raisins • 17 grams or 1/4 cup sliced almonds, chopped


Directions:

  1. Make dressing by whisking together almond butter, olive oil, apple cider vinegar, mustard and salt in a small bowl.

  2. Combine shredded chicken, celery, red onion, grapes, raisins and almonds in a large bowl and toss to mix. Add dressing and continue. Serves 4.
