OVERNIGHT Pumpkin Pie Oats? Yes!
It’s like pumpkin pie everyday!
2 cups (490 grams) almond milk
1 cup (240 grams) water
2 1/2 cups (200 grams) uncooked quick oats
1/4 cup (60 grams) canned pumpkin puree
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 teaspoons pumpkin pie spice or cinnamon
2 tablespoons agave
In a mixing bowl combine milk and water then oats, pumpkin puree, vanilla extract, salt and pumpkin pie spice and agave to the bowl. Then stir until well combined. Allow the oatmeal to sit overnight in the refrigerator covered.
If the oatmeal is too thick, stir in a tablespoon of water at a time until it reaches the desired consistency.
*This can be also prepared in the microwave or stovetop by simmering for 2-3 minutes.
Add honey, and stir. Enjoy!
