CopyCat Dunkin Donuts Pumpkin Munchkins

Pumpkin season is not over YALL!!! Who would not want a GETUFIT approved version of Dunkin's pumpkin munchkins!! These munchkins have more of a crusty outside with a cakey inside! Perfect paired with your coffee in the mornings!


Ingredients:

  • 1 cup oat flour

  • 1/2 cup pumpkin puree

  • 32g vanilla protein powder

  • 1/4 cup melted coconut oil

  • 1 teaspoon vanilla

  • 2 teaspoon pumpkin pie spice

  • 1/2 teaspoon baking soda

  • pinch of salt

Directions:

  1. Mix all ingredients in a bowl.

  2. Refrigerate for 15-30 minutes.

  3. Preheat the oven to 350 degrees F and grease a donut hole pan

  4. Use a cookie scoop to divide the dough into 18-24 pieces depending on the size you would like. A batch of 24 yields 45 calories per bite. A batch of 18 yields 80 calories per bite.

  5. Roll into balls and coat with pumpkin pie spice! Bake for 18 minutes and enjoy!

Serves 18-24 munchkins
