Street Corn Salad

This Street Corn Salad is the perfect summer salad! Take your fresh summer corn and turn it into a delicious and easy-to-make side or the main dish served with your favorite protein!

Ingredients:

  • 6 corn cobs (or 4 cups of corn)

  • 1/2 pint cherry tomatoes

  • 1/3 cup chopped fresh basil

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons avocado oil

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon chili powder

  • 1/4 teaspoon salt

  • 1/2 cup cojita cheese

  • 1/4 cup greek Yogurt

  • 2 tablespoons avocado or olive oil mayo

  • 1/2 jalapeno (optional)

Directions:

  1. Prepare corn according to how you like it, (boiled, grilled, or steamed). I like to brown it on a grill or skillet. This can even be done with frozen corn. Remove the corn from the cob (if using whole). Meanwhile, dice the cherry tomatoes. Finely chop the red onion. Roughly chop the basil.

  2. In a large bowl, mix together the vegetables with the apple cider vinegar, oil, yogurt, mayo, and seasonings. Top with cheese crumbles. Store in the refrigerator for up to 3 days. Serves 8

Totally! Parmesan, Romano, or feta are great substitutes (but Cotija is definitely the best).

No, you can use olive oil

Can I use regular mayo instead of avocado or olive oil mayo?

You can, however, the transfats will be higher making this dish less healthy. You could also omit the

mayo altogether.

Can I use sour cream instead of yogurt?

The Greek yogurt adds a bit of protein and lessens the fat content of this dish. It will taste the same whichever you select. It can also be made without it.
