Skinny Chicken Alfredo Bake

Chicken alfredo?? YUMMY Definitely a fan favorite and I get questions about how to still enjoy a great chicken alfredo recipe without being guilty. Here it is, a guilt-free recipe to cater to you and your family! Add it to your plan for the week!


Ingredients:

  • 1 (16 oz) box penne pasta - preferable Bonza or chickpea pasta

  • 1 cup hummus

  • 1 tablespoon fresh minced garlic

  • 1/2 tablespoon garlic powder

  • 1/2 tablespoon onion powder

  • 1/2 tablespoon Italian seasoning

  • 1/2 teaspoon pepper

  • 3 cups oat milk

  • 1 tablespoon fresh minced parsley

  • 1 cup Parmesan cheese

  • 1/2 cups mozzarella cheese

  • 16 oz cooked chicken

Directions:

  1. Preheat oven to 425 degrees. Spray a 9 x13 inch baking dish with cooking spray.

  2. Prepare pasta to al dente in a large pot or Dutch oven. Drain and set aside.

  3. In the same pot, add the hummus. Use a whisk to stir. Add minced garlic, garlic powder, onion powder, black pepper, and Italian seasoning. Whisk until mixed.

  4. Add milk one cup at a time and continue to stir. Add one cup of parmesan cheese and stir to mix and melt. Once all the sauce is melted, stir in chicken and pasta.

Optional Step: Pour pasta into the baking pan. Top with remaining 1/2 cup of mozzarella cheese and parsley. Bake for 5-10 minutes to melt the cheese. Turn on the broiler for a couple of minutes to brown if desired. Serves 6
