Protein Carrot Cake Oat Bars

Carrot cake packed with protein??? Don't have to tell me twice!! If you are a carrot cake lover, you will enjoy this yummy breakfast, snack, minimeal, etc, and NEVER feel guilt-free! Add this to your meal prep for the upcoming weeks and you will make this a staple in your home!


  • 2 1/2 cups old fashioned oats

  • 3/4 cup protein powder

  • 3/4 cup sweetener of choice

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ginger

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 4 eggs

  • 2 cups grated carrots

  • 1 cup LOW SUGAR Applesauce

  • 1/4 cup maple syrup


  1. Preheat the oven to 350 degrees. Spray a 9x13 inch baking dish with cooking spray.

  2. Mix all of the dry ingredients in a mixing bowl, followed by the wet ingredients. If using raisins, stir into the batter. Stir to combine.

  3. Pour batter into the prepared baking pan and spread evenly. Sprinkle nuts over the top, if desired.

  4. Bake for 50-55 minutes, or until a toothpick comes out clean. Let cool and cut into even size squares and enjoy! Serves 12
