Coffee Protein Muffins

• 1 cup almond meal or almond flour • 32 grams or 1 serving protein powder • 1 teaspoon baking powder •120 grams or 1/4 cup low fat plain greek yogurt (or soy yogurt)

• 1/4 cup milk of choice • 1 egg or 1 flax egg • 2 teaspoons vanilla extract • 1 shot coffee, brewed • 40 grams or 2 tablespoons maple syrup


Directions:

Combine ingredients, and mix until batter is smooth. Preheat oven to 355 degrees. Spray muffin tin with cooking spray. Pour batter into muffin tin and bake for 15 minutes. Test with a toothpick to see if muffins are finished baking. Total servings: 12. Serving Size: Two muffins
