Coconut-Apple Museli

  • 427g or 1 1/2 Greek yogurt or dairy-free yogurt

  • 120g or 1/2 cup unsweetened almond or coconut milk

  • 1 scoop vanilla protein powder (32 grams in weight)

  • 62g or 1/4 cup freshly squeezed orange juice

  • 21g or 1 tablespoon light honey or maple syrup

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon kosher salt

  • 1 cup rolled oats (or gluten-free)

  • 35g 1/2 cup shredded unsweetened coconut

  • 1 large Granny Smith apple, cored and shredded

Optional garnishes:

• Ground cinnamon for sprinkling

• Honey or maple syrup, for drizzling

• Toasted shredded coconut

• Shredded apple

• Toasted chopped nuts, such as almonds, hazelnuts, or walnuts


Directions:

  1. In a medium bowl, whisk the coconut yogurt and milk with orange juice, honey, protein powder, cinnamon, and salt. Fold in the oats, coconut, and apple until thoroughly combined. Scrape the muesli into four 1-cup jars with tight-fitting lids. Refrigerate for at least 1 hour, preferably overnight.

  2. Eat right out of the jar, garnished with cinnamon, honey, toasted coconut, shredded apple, or toasted nuts, if desired (watch calories here!
