Spinach Egg White Muffins

Kind: Mini-Meal

Serves: 10 Serving size: 5 bites


  • cooking spray

  • 1 (4 ounces) cartons of liquid egg whites

  • 4 whole eggs

  • 6 ounces shredded reduced-fat sharp Cheddar cheese, or more to taste

  • 1 (10 ounces) package frozen chopped spinach, thawed and drained

  • 1 teaspoon hot sauce

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper


  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a muffin tin with cooking spray.=

  2. Mix egg whites, eggs, Cheddar cheese, spinach, hot sauce, salt, and pepper in a bowl. Ladle mixture into the muffin tin, filling each cup 3/4 the way full.

  3. Bake in the preheated oven until a knife inserted in the center of a muffin comes out clean, 20 to 25 minutes. Serve warm or cooled.
