Southwest Chicken Salad

  • 18 oz cooked shredded or diced boneless, skinless chicken breast

  • 2 Roma tomatoes, diced

  • 1 bunch green onions, chopped

  • 6 mini sweet peppers or one large orange, red, yellow pepper, diced

  • 15 ounce can black beans, drained and rinsed

  • 15 ounce can corn, drained

  • Salt, to taste

  • Dressing

  • 367g or 1 1/2 cups plain Greek yogurt or dairy free yogurt

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 cup salsa

Directions:

  1. Mix ingredients for dressing together and set aside. Add the rest of the ingredients to a bowl and mix. Serve on bed of greens, tortilla, corn tortilla or plain with extra veggies! This can be made for the week. Serves 6.

Carb is optional since the peppers contain carbs, however you can serve on your choice of bread. A healthy fat should be added such as 50 calories of olives or avocado per servings.
