Sheet Pan Mediterranean Chicken & Veggies

  • 1 lb Chicken breast (can use fish, turkey, beef or pork)

  • 1 Red onion

  • 1 Zucchini

  • 1 Bell pepper

  • 1 pint Cherry tomatoes

  • 2 tbs Avocado oil

  • 2 tsp Dried oregano

  • 2 tsp Minced garlic

  • 1 1/2 tspSalt

  • 1/2 cup Feta cheese

Preheat oven to 375 degrees. Line a baking sheet pan with foil (or parchment or baking mat) and spray with cooking spray. Dice chicken and veggies into bite size pieces. Spread chicken and veggies on sheet pan and drizzle with oil. Sprinkle with seasonings and toss everything until well combined. (Let sit for 15 minutes to marinate the flavors if you have the time). Bake for 20-30 minutes, or until the chicken is cooked through and the vegetables are tender. Remove from the oven and sprinkle with feta cheese. Bake for a further 5 mins or until the feta melts slightly. Enjoy with pita or rice if desired!
