Protein Packed Pumpkin Cake

Mini-Meal


  • 2 1/2 cup Oat flour or regular flour

  • 1 cup protein powder

  • 2 teaspoon Pumpkin pie spice

  • 1 teaspoon Salt

  • 2 teaspoons Baking powder

  • 2 (15 oz) cans of Pumpkin puree

  • 1/2 cup low sugar Applesauce

  • 2 cups Liquid egg white

Mini-Meals and Desserts

Since all meals on this program are interchangeable, this means you can enjoy any of these entrees at any time of day. The following have been created to be used as middle of the day meals or after dinner meals.

Directions

  1. Preheat the oven to 350 degrees and spray a 9x13 inch baking dish with cooking spray.

  2. In a very large bowl, mix together the dry ingredients. Then add the wet ingredients and stir to combine.

  3. Pour the batter into the baking dish and bake until a toothpick comes out clean (about 45-55 minutes). Cool completely before slicing and serving. You can add a scoop of light cool whip if desired* not included in ingredients.
