Oriental Chicken Salad

  • 3 ounces of grilled chicken (or fish)

  • 100 grams or 1/2 cup canned mandarin oranges

  • 12 grams or 2 tablespoons pecans

  • 15 grams or 2 tablespoons light ginger dressing

  • 2-3 cups Romaine lettuce

  • 15 grams or 2 tablespoons shelled edamame (soy beans; can be found in freezer section)

Mix together chicken, oranges, pecans, and dressing. Place on bed of romaine lettuce. Top with 2 tablespoons of shelled edamame.
