Healthy Oatmeal Pumpkin Cookies

A healthier twist on 2 favorites - oatmeal and pumpkin!


Ingredients:

  • 3/4 cup instant oats

  • 1/3 cup flour

  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground ginger

  • 1.5 teaspoons baking powder

  • 1/4 teaspoon salt

  • 4 eggs

  • 3/4 cup pumpkin puree (not pumpkin pie filling)

  • 1 teaspoon vanilla extract

  • 2 tablespoons dark chocolate chips

  • 1 tablespoon miniature chocolate chips

Instructions:

NOTE: it is very important to measure using a scale to ensure desired consistency

  1. Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.

  2. Whisk together the oats, flour, cinnamon, nutmeg, ginger, baking powder, and salt in a medium bowl.

  3. In a separate bowl, whisk together the eggs, pumpkin purée, and vanilla.

  4. Add in the flour mixture, stirring just until incorporated.

  5. Fold in the dark chocolate chips and ½ tablespoon of miniature chocolate chips.

  6. Drop the cookie dough into 16 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width using a spatula.

  7. Gently press the remaining miniature chocolate chips into the tops.

  8. Bake at 325°F for 11-14 minutes.

  9. Cool on the pan for 10 minutes before turning out onto a wire rack,
