• 1/2 cup uncooked quinoa
• dash salt
• 2 cups chopped cucumbers
• 1/2 cup chopped tomatoes
• 1 cup chopped bell peppers
• 2 tablespoon sun-dried tomatoes
• 1/4 cup chopped olives
• 1 tablespoon red wine vinegar
• 2 teaspoon olive oil
• 1 teaspoon oregano
Prepare quinoa according to the instructions.
While quinoa is cooking, chop and prep veggies and set aside.
In a small bowl, mix vinegar and oil along with all of the seasonings.
When quinoa has cooled mix in veggies and dressing.
Right before serving add slices and optional feta (not shown).
Can serve with steamed veggies and additional protein. Serves 2
