Grain Free Sugar Cookie Bars

  • 2 1/2 cups Almond flour

  • 3 tbs Arrowroot powder

  • 1/2 tsp Baking soda

  • 1/2 tsp Salt

  • 1/2 cup Low Sugar Applesauce

  • 3/4 cup Sweetener of choice

  • 1 Egg

  • 1 tsp Almond extract

Preheat the oven to 350 degrees. Line a 9×9 inch baking pan with foil or parchment paper. Spray the foil or parchment paper with cooking spray and set aside.

In a medium mixing bowl, mix together the dry ingredients. Add the wet ingredients, and stir to combine.

Press the dough evenly into the bottom of the prepared pan. Bake about 20 minutes, or until a toothpick inserted into the center comes out clean. The cookie bars with be slightly puffy and lightly golden brown on top.

Let the cookie bars cool in the pan for about 20 minutes before using the foil or parchment to help remove the cookie bars from the pan. Transfer the bars to a cutting board, frost using optional frosting if desired, then cut into 16 even pieces. Enjoy!
