Getufit Egg Salad

A nice addition to the GETUFIT style!!! Make this and be guilt-free. Add this to the meals for your easter get-together with family and it will be gone within seconds! Enjoy!

  • 8 hard-boiled eggs, chopped

  • 3/4 cup yogurt Greek Yogurt

  • 1/2 cup celery, small chop

  • 1 tablespoon mustard

  • 2 green onions, minced

  • 6 dill pickles, diced

  • 1/2 teaspoon paprika

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon kosher salt, or to taste

  • fresh black pepper to taste

Directions:

  1. Combine yogurt, celery, mustard, green onions, pickles, paprika, cumin, salt, and black pepper to taste in a bowl. Add chopped eggs and gently stir to combine all ingredients together. Taste for seasoning and add more salt, pepper, or spices if desired.

  2. Serve on a bed of fresh green lettuce or serve with low-carb crackers or bread. Enjoy! Makes 4 servings
