1 spaghetti squash
1- 15 ounce can garbanzo beans, rinsed and drained
1 red pepper, chopped
3 large handfuls of spinach, chopped
2 garlic cloves, minced
2 tablespoon extra virgin olive oil
2 tablespoon Weber Chicago Steak Seasoning, or more to taste
1 tablespoon Italian seasoning, or more to taste
Sea salt to taste
Cut the spaghetti squash in half lengthwise, and place in the microwave for 7 to 10 minutes. If you have more time, you can bake the halves in a 350° F oven for 40 minutes.
Once heated, carefully scrape the flesh of the squash into a skillet, then add the olive oil, garlic & Italian seasoning.
Place on the stove on medium heat, and mix well to combine.
Once the squash is warmed for about 3 minutes, add the rest of the veggies, salt & steak seasoning.
Stir well to combine, and allow to cook for around 3-5 minutes.
Remove from heat and serve. Serves 8
*Add 3-4 ounces or 25 grams of cooked protein to each serving
