Easy Mini Eggplant Pizza

Easy, yummy pizza recipe with only 6 ingredients!!! An easy recipe to make if you are unsure of what to cook your families for dinner..! It only takes 30 minutes !!!!


  • 1 Medium Eggplant ( Cut into 1/2 thick slices)

  • 1 tablespoon Olive Oil

  • 1/2 cup Marinara Sauce

  • 1 cup Shredded Mozzarella Cheese

  • 1 teaspoon Italian Seasoning

  • 1 ounce Mini Pepperoni Slices

  • Salt and Pepper to taste


  1. Preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with parchment paper.

  2. Arrange the eggplant slices in a single layer on the lined baking sheet. Brush or spray both sides lightly with olive oil. Sprinkle with sea salt and black pepper.

  3. Bake for about 15 minutes, until the eggplant is soft and golden.

  4. Spread about 2 teaspoons (9 g) of marinara sauce on each eggplant slice. Sprinkle each with about 2 tablespoons (28 g) of shredded cheese. Top with Italian seasoning and pepperoni slices.

  5. Set the oven to broil or 500 degrees F (260 degrees C). Return to the oven. Bake for about 5 more minutes, until the cheese is melted and slightly browned. Enjoy!

Serves 6: 2 Pieces Each!
