Creamy Avocado Cilantro Dressing

This is a favorite in my house and in the household of many of my clients. This summertime dressing can be used as a marinade, salad dressing, or even a sandwich spread!

Creamy Avocado Cilantro Lemon Dressing

Low in calories and high in healthy fats!


INGREDIENTS

2 large avocados 1 handful cilantro about 1/2 cup 1/2- 3/4 cup water (you pick the thickness) 2 tbsp olive oil 2 full lemons peeled and seeds removed 1 large garlic clove 1 teaspoon sea salt to taste



INSTRUCTIONS In a blender or food processor combine ingredients for dressing until smooth. I throw the entire lemon whole after it is peeled. You can also use basil instead of cilantro for a different flavor. Store in fridge for 5-7 days.
