1.5 lb Lean ground meat substitute of choice or 2 cups beans fpr meatless option
1 cup Salsa
1 tablespoon Chili powder
1 tablespoon Cumin
1/2 teaspoon Garlic powder
1/2 teaspoon Salt
2 cups Water
1 (10 oz) pkg Dry chickpea or BONZA brand pasta *
1 cup Almond milk or milk of choice
2 Avocados sliced
Optional dairy free sour cream*
In a large skillet sprayed with cooking spray, brown the ground turkey (or ground meat of choice) over medium heat, until browned. Add the salsa (or taco/tomato sauce) and taco seasonings.
Increase the heat to medium high until the mixture begins to simmer.
Stir in the uncooked noodles, milk, and water and reduce heat to low, cover and allow to cook for 10-15 minutes.
When noodles are just tender, remove cover. Continue to stir until cheese melts and sauce thickens to your liking.
Serve with avocado, tomatoes, cilantro, and dairy free sour cream on top if desired!
