Clean Eating Greek Gyros

These Clean Eating Greek Gyros can be made in the crockpot or Instant pot! The meat is full of Mediterranean flavors and is so tender it falls apart! Wrapped in a warm pita, (or put on a salad) and served with feta, tomatoes, onions and hummus- these Gyros are the perfect lunch or dinner!


Gyro Meat:

  • 2 lb Pork tenderloin (you can use chicken)

  • 1 Red onion

  • 2 tbs minced garlic

  • 1 tbs wine vinegar [2]

  • 3 tbsp lemon juice

  • 1/4 cup water

  • 2 tsp dried oregano

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

Sandwiches:

  • 8 pieces pita bread (or any wrap)

  • 1 cup cherry tomatoes

  • 1 cup cucumber

  • 1 cup Tzatziki Sause

  • 1/2 cup feta cheese



Crockpot: Spray your slow cooker with cooking spray. Rinse pork tenderloins and pat dry. Trim any fat. Add the pork tenderloin (or chicken) to the slow cooker. In a small bowl combine onion, garlic, vinegar, lemon, water, and seasonings. Pour over meat. Cover and cook on low for 6-8 hours or high for 4-6 hours. Shred meat in crockpot, tossing in juices, and place on warm pita bread (microwaved or toasted in a skillet or grill) and top with veggies and tzatziki sauce or sauce of choice on top, as well as a sprinkle of feta cheese if desired.

Instant Pot: Spray your Instant Pot with cooking spray. Turn on sauté mode. Rinse pork tenderloins and pat dry. Trim any fat. Add the pork tenderloin (or chicken) to your pressure cooker. Sauté pork on each side until brown for about 2 minutes each side. Meanwhile, in a small bowl combine onion, garlic, vinegar, lemon, water, and seasonings. Pour over meat. Turn your pot to manual, (high pressure cook), then set the timer for 15 minutes. Close the lid and seal the vent. Allow the pressure to naturally release. Then open and shred meat, tossing in juices. Place shredded meat on warm pita bread (microwaved or toasted in a skillet or grill) and top with veggies and tzatziki or sauce of choice on top as well as a sprinkle of feta cheese if desired.
