Cinnamon Coffee Cake

DAIRY FREE & GLUTEN FREE MODIFICATIONS INCLUDED

Serves 12

Breakfast


  • 2 cups Oat flour or regular flour

  • 1/2 cup protein. Powder

  • 1 teaspoon Baking soda

  • 2 teaspoons Cinnamon

  • 1/2 teaspoon Salt

  • 2 Eggs

  • 3/4 cup low sugar Applesauce

  • 1/2 cup Maple syrup (low sugar works best)

  • 1 teaspoon Vanilla extract

Crumb Topping

  • 1 cup Oat flour or flour of choice

  • 1/2 cup protein powder

  • 1/3 cup Coconut oil

  • 2 teaspoons Cinnamon




Directions

  1. Preheat oven to 350 degrees and spray a 9x9 inch baking pan with nonstick cooking spray.

  2. In a mixing bowl, mix together the dry ingredients for the cake. Add the wet ingredients and stir to combine. Pour into baking dish

  3. In a small bowl, mix together the ingredients for the crumb topping. Sprinkle over top of the cake batter until evenly distributed.Bake for 40-45 minutes, or until the toothpick comes out clean. Let cool at least 30 minutes before serving.
