Use beef, turkey, chicken or tofu based meat substitute

2 lbs Lean ground meat of choice 1 (8 oz) can Tomato sauce 1 tablespoons Lime juice 2 tablespoon Chipotles in adobo sauce 1 teaspoon Onion powder 1 teaspoon Garlic powder 1 teaspoon Chili powder 2 teaspoon Cumin 1/2 teaspoon Paprika 1 can Diced green chiles


Instant Pot: Add everything to the Instant Pot and stir to combine. Cover and lock lid. Select manual setting; adjust pressure to high, and set time for 20 minutes. When finished cooking, quick-release the pressure. Next, remove the lid and select the high sauté setting. Simmer, stirring occasionally, until reduced and slightly thickened, about 5-6 minutes, making sure to crumble the beef as it cooks. Serve in shells or over a bed of rice or lettuce with desired toppings. Crockpot: Add everything to the Crockpot and stir to combine. Cover and cook for 1-2 hours, on high then break up the meat with a spatula. Cover and continue to cook for 6-8 hours on low. Drain off some of the excess liquid and serve in shells or over a bed of rice or lettuce with desired toppings.


1. Serve with up to 150 calories or up to 40 grams of carbohydrates such as rice, tortilla or beans

2. Add an additional 100 calories or up to 18 grams of healthy fat such as olives or avocado.

3. Woman serving size is 4 ounces of protein on the food scale which equals 25 grams of protein, Men should consume 6-8 ounces of protein in weight which equals 35-45 grams of protein.
