Chickpeas & Black Bean Caviar

• 1-15 ounce can black beans, drained and rinsed • 1-15 ounce can chickpeas (garbanzo beans), drained and rinsed

• 1-15 ounce can diced tomatoes, drained and rinsed • 1-15 ounce can corn, drained and rinsed • 4 ounce can diced green chilies, drained and rinsed • 1 red onion, chopped • 1 green bell pepper, seeded and chopped • 1 jalapeño pepper, diced (optional) • 1/4 cup chopped fresh cilantro • Juice from 2 limes • 1/4 cup olive oil • Salt and pepper, to taste • Avocado slices, for topping


  1. Drain and rinse all of the canned vegetables and add to a bowl.

  2. Dice onion, peppers and cilantro. Mix in with the bean mixture.

  3. Mix the lime juice, olive oil, pepper and salt and add to the prepared mixture. Top with avocados. Makes 6 servings
