• 1-15 ounce can black beans, drained and rinsed • 1-15 ounce can chickpeas (garbanzo beans), drained and rinsed
• 1-15 ounce can diced tomatoes, drained and rinsed • 1-15 ounce can corn, drained and rinsed • 4 ounce can diced green chilies, drained and rinsed • 1 red onion, chopped • 1 green bell pepper, seeded and chopped • 1 jalapeño pepper, diced (optional) • 1/4 cup chopped fresh cilantro • Juice from 2 limes • 1/4 cup olive oil • Salt and pepper, to taste • Avocado slices, for topping
Drain and rinse all of the canned vegetables and add to a bowl.
Dice onion, peppers and cilantro. Mix in with the bean mixture.
Mix the lime juice, olive oil, pepper and salt and add to the prepared mixture. Top with avocados. Makes 6 servings
