A nice cool refreshing salad that can become a summer staple! As the weather gets warmer, we want refreshing things to eat, and this right here does the justice. This can become your go-to item to bring to cookouts and gatherings in the summer! Don't miss it!
Ingredients:
6 cups broccoli
3 cups broccoli slaw
1 Red onion
1 Apple
1 cup fresh blueberries
1/2 cup sunflower seeds
Dressing:
1/4 cup olive oil mayonnaise
1/2 cup greek yogurt
1/4 cup apple cider vinegar
1/4 cup agave
1/2 tsp salt
1 tablespoon poppy seeds
Directions:
Chop all of the ingredients for the salad and combine in a bowl.
Mix the ingredients for the dressing in a small bowl until combined. Pour over the salad and toss to combine. Cover and let sit in the fridge for at least 2 hours before serving (it can also be made 1 day in advance).
Serve as a side salad along with protein.
