Banana Bread Breakfast Cookies




Ingredients:

  • 2 Bananas

  • 1/2 cup Nut butter

  • 2 tbs Honey

  • 2 cups Old fashioned oats

  • 1 cup Protein powder

  • 2 eggs

  • 1/2 cup almond flour

  • 1/2 tsp Salt

  • 1/2 tsp Baking soda

Optional:

  • 1/4 cup Chocolate chips

  • 1/8 cup Sweetener of choice



Directions:


  • Preheat oven to 350 degrees. Line a baking pan with parchment paper or foil, and spray with cooking spray.

  • In a medium mixing bowl, mash banana until smooth. Add peanut butter and honey and stir to combine. Add in the rest of the ingredients and stir until completely combined. Stir in chocolate chips and additional sweetener if desired.

  • Drop cookie dough onto pan, forming 8 cookies into desired shape on the prepared baking sheet, (note: they will not spread or change shape much from how you originally form them). Bake for 18-22 minutes, or until edges start to turn lightly golden brown.
