Bacon Ranch Zucchini Boats

These Chicken Bacon Ranch Zucchini Boats are the perfect summer dinner that is sure to satisfy! These zucchini boats are full of flavor, healthy, and easy to prepare. Juicy chicken, salty bacon, and homemade ranch, in one meal... You simply can't go wrong!


  • 4 large zucchini


  • 2 cups cooked chicken breast

  • 1 cup Greek yogurt

  • 1/2 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/2 teaspoon dried dill

  • 1/2 teaspoon dried parsley

  • 1/4 cups turkey bacon


  • 1/2 cups shredded cheese

  • 1/4 cups turkey bacon


Preheat your oven to 375 degrees, and line a large, rimmed baking sheet with parchment paper. Place zucchini boats cut side up onto the prepared baking tray and spray with cooking spray. Season with a pinch of sea salt and pepper. Place the tray into your preheated oven and bake for 8-10 minutes, or just until they begin to soften. Let cool for a few minutes, then scoop out insides of those zucchini, and reserve it for something for future use, if desired. Meanwhile, in a large bowl, stir together all the remaining ingredients for the filling (everything except for topping). Spoon this filling into your zucchini boats and sprinkle with cheese and bacon (or leave if off if you wish). Return to the oven and bake until cheese is melty, about 10-12 minutes more.
