Apple, Grape Chicken Salad

Dressing - mix together:

  • 170g or 6 ounces plain Greek yogurt or plain soy yogurt

  • 26g or 2 tablespoons light avocado mayonnaise

  • 42g or 2 tablespoons honey

  • 1/2 lemon, juiced

  • Salt and pepper, to taste


Salad - mix together and top with dressing:

  • 1 pound boneless, skinless chicken breast (about 2 cups diced)

  • 92g or 1 cup red grapes, sliced

  • 118 or 1 cup grams apple, diced

  • 2 celery stalks, sliced

  • 2 green onions, sliced

  • 55g or 1/2 cup slivered almonds

  • 64g or 1/2 cup dried cranberries

Directions:

  1. Make for the week. Serve on lettuce or pita, tortilla or a healthy cracker total yield 150 calories and 30-35 grams coming from carbohydrate.
