1 1/2 lbs Steak
1/2 cup Beef broth
1/2 cups Liquid Aminos or soy sauce
1/3 cup Sweetener of choice
1 tbs Avocado oil
1 tsp Minced garlic
2 tbs Cornstarch
2 tbs Water
3 cups Broccoli florets
1 1/2 cups Brown rice
1 tbs Toasted sesame seeds
Cook the rice (or cauliflower rice) according to package directions.
Steam fresh broccoli in the microwave with 2 cups of water in a covered glass bowl (or in a pot with cover until just tender), then drain excess water. If using frozen, cook per package instructions.
In a mason jar or small bowl, combine the beef broth, soy sauce, sweetener, oil, and garlic. Whisk cornstarch (or arrowroot) with 2 tbs water to make a slurry and add it to the sauce. Cut steak into strips. Whisk cornstarch (or arrowroot) with 2 tbs water to make a slurry and add it to the sauce.
Heat a skillet over medium high heat. Spray pan with cooking spray, add the steak, and sauté for 1-2 minutes on each side (or until just browned on the outside). Remove from pan and set aside. Pour sauce mixture into the pan. Cook over medium-high heat, allowing sauce to simmer for about 3-5 minutes, or until sauce thickens.
Add steak and broccoli to the pan with the sauce, and stir to toss everything together.
To serve, place 3/4 cup rice on a plate and top with one portion of the broccoli and beef. Drizzle with any leftover sauce from the pan, add finish with a sprinkle of sesame seeds, if desired.
