Quinoa Kale Apple Power Salad

• 2 oz protein of choice (I use chicken or salmon)

• 16 grams or 2 tablespoons shaved almonds

• 50 grams diced apples

• 100-150 grams or 3-4 cups kale

• 80 grams 1⁄2 cup cooked quinoa

Dressing:

• 30 grams or 2 tablespoons orange juice

• 1⁄4 teaspoon Black pepper

• 1⁄4 teaspoon Salt

• 30 grams or 2 tablespoons balsamic vinegar

• 1 teaspoon sugar or sugar substitute


 
Directions:

Mix all ingredients into a salad form. (Makes 1 large salad). Mix dressing

ingredients in separate bowl and whip together until smooth. Add to

salad.
