Power Greens Breakfast Skillet

  • 1 medium yellow onion, sliced thin

  • 120g or 4 cups assorted greens like kale, or spinach

  • 4 eggs

  • 3 tablespoon Parmesan cheese or nutritional yeast

  • Pinch of salt & fresh cracked pepper

Directions:

  1. Spray skillet with cooking spray. Add onion, stir to coat. Caramelize onions.

  2. Add greens to the skillet and continue to cook on the stove until wilted. Form 3 wells for the eggs.

  3. Crack one egg into each well and cook for 3-4 minutes until whites start to set.

  4. Sprinkle with cheese before transferring to the oven and broil eggs until they are cooked to your liking. Total servings: 2
