Indian Lentil Stew

  • 1 lb bag raw lentils

  • 1/2 pound raw navy beans

  • 8 cups water

  • 2 cups spinach or kale

  • 3-4 carrots chopped

  • 1 onion diced

  • 1- 15 ounce can tomato paste

  • 1 tablespoon garlic powder

  • 1/2 tablespoon salt

  • 1 pound uncooked chicken breasts

Directions:

  1. Add ingredients to your instant pot or crockpot.

Instant Pot: 25 minutes with slow-release

Crockpot: 6 hours on low

GETUFIT TIP:

This is great with no veggies added as well. Add variety by switching the vegetables you add. Try eggplant, celery, squash, or any of your favorites. Swap out the tomato paste for a can of your favorite salad and omit the salt from the recipe for a Mexican flair!
